In the UK, there is a lot of competition for sous chef jobs. There are about 250,000 line cooks and section chefs working in the UK. For the majority of them the next step up the career ladder is to become a sous chef.
Unsurprisingly, when a position comes up there is a scramble and dozens of very experienced line chefs apply. Naturally, the fact there are so many chefs applying for relatively few positions means that many exceptional cooks cannot progress onto the next step.
As a result, ambitious line or section chefs are choosing to work abroad as a sous chef. Because of the UK’s reputation for good cuisine and its high standards of training many are beating off the local competition and fulfilling their dream of becoming a sous chef.

Go online
Without a doubt, our top tip is to go online. In particular, go to those job boards that specialise in finding people for the catering and hospitality trades. Many international firms advertise their vacancies on these job boards, so that is where you will find the majority of opportunities.
Network
Befriending chefs who are currently working abroad is another good strategy. Not all kitchen positions are advertised. The more people you know, and are in contact with, the more sous chef vacancies you will find. If you meet someone at an event or conference, stay in touch and help each other out.
Trade press
Some large international hospitality firms still advertise their jobs in the main trade magazines. It is always worth flicking to the jobs page of your favourite trade magazines each month. Also, keep an eye on national newspapers.
By being diligent and using all avenues you considerably increase your chances of becoming a sous chef.
